The Poha (the flattened rice dish) recipe is a beloved dish in Indian cuisine, known for its delicious flavors and versatility. Originally a breakfast option, it can also be enjoyed as a satisfying lunch or dinner. What makes this recipe even more appealing is its low-carb nature, making it a perfect fit for those following a Ketogenic diet.
Is Poha suitable in Keto?
The original recipe uses flattened rice flakes, which we will be replacing with grated cauliflower. This makes it perfect, delicious and healthy to eat on a Keto diet.
It is relished typically in southern parts of India, but also has made its way to all over the country in recent years. This recipe is refreshing, can be carried to work and can be made in a jiffy.
Keto Poha Recipe with Cauliflower
Equipment
- Frying pan
- Tablespoon

Ingredients
- 300 gm Grated cauliflower
- 60 gm Diced red onion
- 30 gm Peanuts, salted or plain
- 2 tbsp Ghee
- 1 tsp Mustard seeds
- 1 tsp Turmeric
- 1 Green chilly or more as per your taste
- 8 Curry leaves
- Salt as per taste
- Cilantro or coriander for garnishing
Instructions
- Separate the florets and stalks from the cauliflower.
- Put the florets in a food processor and cut the stalks into cubes. Or grate them by hand.
- Boil the stalks in salted water for about 10 minutes or until getting tender.
- Take a frying pan to dry roast the peanuts until they turn golden brown. Set them aside in a bowl.
- Use the same frying pan for heating the Ghee, until hot.
- Add the mustard seeds to the heated ghee and add the curry leaves and onion as soon as the mustard seeds start popping. Lower the heat.
- Add a little salt and turmeric and fry out the mix. Keep stirring with a light hand.
- Now, add the green chili and the remaining peanuts to the fried mixture and fry it for another one minute.
- Add the cauliflower rice to the mixture, season with salt. Cover and cook on medium heat setting until the cauliflower turns tender.
- Add the boiled stalks to the cooked up cauliflower and mix it thoroughly.
- Turn off the heat and garnish the cauliflower with coriander and a squeeze of lime juice.
- Serve and enjoy!

Across India, chivda as poha is a breakfast staple. In Bihar, Jharkhand, Uttar Pradesh, Assam and West Bengal, the flattened rice is washed and mixed with yogurt. Doi chira/chire is a breakfast dish in West Bengal and Assam. With palm jaggery added to it, flattened rice rings in the harvesting season all over eastern and northeastern India. In Bihar, dahi chura is a Makar Sankranti special — Indian Express.
