I love to enjoy Indian dishes with spicy chutney during the winter season. I feel a chutney is a perfect condiment to add a fiery kick to winter meals while making food more comforting. Keeping up with my Ketogenic Lifestyle, I have another tangy and spicy Keto Red Bell Pepper Chutney recipe for you. It is perfectly low-carb to meet our Keto goals and also adds the right amount of zest that Indian food requires.
Jam-packed with vibrant flavours and spicy touch, it is a game-changing recipe for me.
Let’s begin with the recipe.
Prep time | 5 minutes |
Cook Time | 10 minutes |
Total Time | 15 Minutes |
Ingredients:
- 1 large red bell pepper
- 2 garlic cloves
- ½ medium onion
- 4-5 dried red chillies
- 2 tsp oil
- Few curry leaves
- ½ inch tamarind
- salt to taste
- ½ tsp stevia
- ¼ cup peanuts
Tempering (optional):
- ½ teaspoon mustard seeds
- ½ teaspoon oil
- a pinch hing (asafetida)
- few curry leaves
Instructions:
- Add 2 teaspoons oil to a pan over medium heat.
- Once heated, add garlic, curry leaves, dried red chilies, and chopped onions.
- Saute it for around 2 minutes until it turns a little pinkish.
- Add the chunks of red bell pepper to the mixture and saute until they turn brownish and a little charred, enhancing the smoky flavor.
- Remove from the heat once cooked and let it cool.
- Now, roast ¼ cups of peanuts in this same pan or in an air fryer. Once roasted, let them cool. Another easy option is to use unsalted roasted peanuts, which are easily available in stores.
- Take a blender and add the red bell pepper mixture along with roasted peanuts, tamarind, salt, and stevia (optional). Mix everything well in fine consistency.
Tempering (Optional):
- For an additional layer of flavour, you can consider tempering by heating ½ teaspoon of oil and adding curry leaves, mustard seeds, and a pinch of hing in it.
- Now, pour it over the chutney and mix properly.
