  1. In a large skillet pot, heat olive oil. Then sauté the onion, garlic, and mushroom for 5–6 minutes on medium-low heat.
  2. After that, add the turmeric, cumin, and garam masala to the veggies and sauté for at least 2 minutes on low heat.
  3. Take a blender and add the coconut milk, diced tomatoes, bell pepper, and yogurt. Blend until smooth.
  4. Pour the sauce from the blender to the skillet pot along with the tofu.  Cook on low flame for 15 minutes.
  5. 5 minutes before serving the dish, add the spinach and cilantro to the pot and cover.
  6. You can add black pepper and cayenne pepper if desired, and serve with Keto rice for a complete Keto Meal.
