Today, I’m excited to share with you a recipe that holds a special place in my heart – a wonderfully simple mutton (Rogan Josh) curry. This dish has secured its spot right at the top of my list of comfort foods, and let me tell you, it’s a saviour for those lazy evenings when the idea of an elaborate meal feels a bit too overwhelming.
Rogan josh, also spelled roghan josh or roghan ghosht, is an aromatic curried meat dish originating from Kashmir. It is made with red meat—traditionally lamb, mutton, or goat—and coloured and flavoured primarily by alkanet flower (or root) and Kashmiri chilies. It is one of the signature recipes of Kashmiri cuisine. Roughan means “clarified butter”or “oil” in Persian and Hindi, while juš (alternatively romanticized josh) means to “stew” or “braise” and ultimately derives from the verb jušidan meaning “to boil”. Rogan josh, by this definition, may mean “stewed in ghee” — Wikipedia.
Ingredients You Need For Rogan Josh Curry
Mutton | ½ kg |
Chopped onion | 1 Large |
Ghee (clarified butter) | 2 tablespoons |
Yogurt | ½ cup |
Chilly Powder or 2 Dried Whole Red Chillies (Optional) | 1 teaspoon |
Garam Masala | 1 teaspoon |
Cardamoms | 2 black |
Cinnamon | 1 small twig |
Bay leaf | 1 |
Salt | As per your taste |
Chopped Coriander/Cilantro leaves (for garnishing) | Fistful |
Directions
Keto Lazy Lamb (Rogan Josh) Curry
Ingredients
- ½ kg kg Mutton
- 1 piece Chopped onion Large
- 2 tbsp Ghee (clarified butter)
- ½ cup Yogurt
- 1 teaspoon Chilly Powder or 2 Dried Whole Red Chillies (Optional)
- 1 teaspoon Garam Masala
- 2 piece Cardamoms black
- 1 twig Cinnamon Small twig
- 1 leaf Bay leaf
- Salt As per your taste
- 1 Fistful Chopped Coriander/Cilantro leaves (for garnishing)
Instructions
- Boil the mutton for 15 minutes in water.
- Add salt, cardamom, cinnamon and bay leaf.
- Once the mutton is partly tender, keep it aside.
- The stock will be used later when the mutton will be roasted on low heat.
- In a broad pan, heat the ghee and brown the onions.
- Add the chilly powder or the whole chillies, garam masala and add the mutton pieces.
- Now roast the mutton on a low heat for at least fifteen to twenty minutes.
- Beat the curd lightly and keep it handy.
- After every five to seven minutes, keep adding the stock and the yogurt alternatively.
- The mutton will be done once the fat separates and starts floating on the sides.
- Season the mutton, and add the leftover stock and cover till done.
- If you have a pressure cooker; after roasting, close the pressure cooker.
- After two whistles, lower the heat for 15 minutes.
- Once the steam is out, check if the meat is tender.
Tip: The cooking time in this recipe is for meat of an adult goat, not of a lamb. If cooking with lamb meat, the timings will reduce considerably — Priya Dogra.
