Keto Indian Roasted Vegetables Recipe
Ingredients
Vegetables
- Cauliflower 225 grams
- 110 gramsMasala
- 170 gramsWhole Mushrooms
- Green Beans, Sliced170 grams
- Tomato Purée170 grams
- Olive Oil
- 2 tablespoons Ghee, or Melted Butter
- 2 teaspoon Fresh Ginger, minced
- Garlic clove
- 1 minced clove
- 1/2 teaspoon Chilli powder (raw ground chillies)
- 1/4 Garam Masala
- 1/4 teaspoon Turmeric
- Salt and pepperAs per your preference
Garnish
- Sliced Green Onion
- Chopped Cilantro
Instructions
- Take a non-stick frying pan and put it over medium-high heat on a gas top, then add the oil to the pan.
- When the oil is hot, add the vegetables, ginger & garlic, and stir.
- Sauté until veggies are crisp and tender.
- Turn the heat down to medium and add the tomato sauce and spices.
- Cook until the sauce reduces a bit and the vegetables are cooked.
- Season to taste with salt and pepper. Serve.
Notes
This dish is rich in fiber, healthy fats, and Indian spices, making it a satisfying, keto-friendly addition to any meal. Garnish with fresh cilantro for extra flavor.
