Introducing my latest creation: Keto Indian Roasted Vegetables!
The recipe is a medley of colourful veggies bathed in a tantalizing tomato purée infused with aromatic Indian spices. With every bite, you’ll experience a symphony of flavours. And the best part? This dish is entirely Low Carb, making it a fantastic alternative to the traditional Aloo Gobi while staying true to your Ketogenic Diet.
This dish will elevate your dining experience to a whole new level. It’s a perfect side dish for any main course, or can even stand alone as a satisfying vegetarian meal.

Ingredients
Vegetables
Cauliflower Heads | 225 grams |
Green Beans, Sliced | 170 grams |
Whole Mushrooms, Quartered | 110 grams |
Masala
Tomato Purée | 170 grams |
Olive Oil, Ghee, or Melted Butter | 2 tablespoons |
Fresh Ginger, minced | 2 teaspoons |
Garlic clove, minced | 1 clove |
Chilli powder (raw ground chillies) | 1/2 teaspoon |
Garam Masala | 1/4 teaspoon |
Turmeric | 1/4 teaspoon |
Salt and pepper | As per your preference |
Garnish
- Sliced Green Onion
- Chopped Cilantro
Directions
- Take a non-stick frying pan and put it over medium-high heat on a gas top, then add the oil to the pan.
- When the oil is hot, add the vegetables, ginger & garlic, and stir.
- Sauté until veggies are crisp and tender.
- Turn the heat down to medium and add the tomato sauce and spices.
- Cook until the sauce reduces a bit and the vegetables are cooked.
- Season to taste with salt and pepper. Serve.
