Keto Coconut Curry Chicken Thighs with Broccoli
Ingredients
- 1 tablespoons Coconut Oil
- 6-8 Chicken Thighs Skin-On, Bone-In
- 1 Onion, Finely Chopped
- 3 3 Garlic Cloves Crushed
- 1 teaspoon Crushed Ginger
- 2 teaspoons Garam Masala
- 1 teaspoon Ground Coriande
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Turmeric
- 1/2 teaspoon Smoked Paprika
- 1/2 teaspoon Chilli Powder
- 400 g Coconut Milk
- 2 tablespoons Cream (Optional)
- 1 teaspoon Stevia (Optional
- 1/2 Juice lemon
- Salt and Pepper to taste
- 2 cups Broccoli Florets
Instructions
- Melt the coconut oil in a large frying pan, then fry the chicken until it's golden and crisp. Remove the chicken from the pan and set it aside.
- After frying the chicken, cook the onion in the same pan until it's soft and see-through. If necessary, add a bit more coconut oil. Then, toss in the ginger, garlic, and spices, and cook for another 30 seconds until they start to smell really good.
- Pour the coconut milk, cream, and stevia into the pan and let it start bubbling gently. Put the chicken thighs back into the sauce, then lower the heat and let everything cook together for about 15–20 minutes until the chicken is done.
- While that's cooking, steam the broccoli until it's almost done. Then, add it to the chicken and coconut curry sauce to finish cooking together.
- Sprinkle some lemon juice, salt, and pepper on the chicken, and it's ready to serve!
