Kheer immediately reminds me of my childhood, when my mother used to make this dessert to celebrate everyday joys. Simple, delicious, and packed with wonderful memories, I made this Keto version of Kheer for all of you that tastes no different than regular Kheer but actually better.
Must try my Keto Almond Phirni Kheer. The recipe may seem impossible to many, but trust this recipe that I have tried lately and instantly fell in love with it. While Phirni Kheer is a popular rice pudding from Southern Asia, Keto Almond Phirni is completely different but tastes amazing. The best part is that Keto Almond Phirni is very easy to make, you can prepare it anytime to satiate your sweet cravings.
But some people may also get confused between Phirni Kheer and Kheer. So, before getting into the recipe, let me clear the difference between Phirni and Kheer.
Difference between Phirni and Kheer
Well, both these desserts are very closely related. However, Kheer involves various things, like grains, whole rice, etc. However, Phirni is typically made only of ground rice and which I didn’t use, as it is not Keto-friendly. I used almond flour instead to make it carb-free.
The major difference between the two is the texture. Kheer is a little chewy and easy to bite in, as per what ingredients you add to it.
The Persians, who introduced firni (yet another variation of kheer) in India, were also said to be rather fond of this sweet dish. In fact, they were the first ones to introduce the use of rose water and dry fruits in the dish, which till then was made by boiling rice first and then adding milk that could make the dish smooth enough to swallow yet with a little bite that made it the perfect meal. — Indian Experess
On the other hand, Phirni has a milky and smooth texture. This sweet dessert is not only low in carbs but also free from soy and gluten. Hence, it makes a perfect option to enjoy your favorite Indian dessert without compromising on your health routine. Let’s quickly get into the recipe.
Keto Almond Phirni Kheer
Equipment
- Tablespoons
- Saucepan
- Cup
- Bowls
Ingredients
- 1 cup Unsweetened Almond Milk
- 3/4 cup Heavy Whipping Cream
- 1/2-1 teaspoon Ground Cardamom
- 2 tablespoons Truvia or Stevia
- 1/2 Superfine Almond Flour
- 2-3 Saffron Strands
Instructions
- Take a saucepan and add flutter cream, almond flour, almond milk, Truvia, cardamom, and crushed saffron into it. Now cook all the ingredients over medium heat till the mixture boils and flutters to avert lumps. When the Phirni seethes, reduce the flame and let it simmer till the mixture turns into a thin pancake batter-like consistency.
- Now turn the flame off, let it cool down and freeze for 1-2 hours.
- Take out the mixture from the freezer and sprinkle some ground cardamon before serving it in bowls.
