Ingredients

  • 3 tablespoons Coconut Flour
  • 1/2 tablespoon Psyllium Husk Powder
  • 1/8 teaspoon Baking Powder
  • 1/8 teaspoon Salt
  • 1/2 tablespoons Ghee or Coconut Oil or a mixture of both melted,

Instructions

  • Mix the coconut flour, psyllium husk powder, baking powder, and salt in a medium bowl.
  • Mix the ghee, dissolved gelatin, and boiling water and make a soft dough.
  • Separate the dough into two balls, then flatten each one to make rotis.
  • Heat a non-stick skillet over medium-high heat. Add a small amount of ghee to the skillet. Once melted, place one of the roti circles in the skillet and reduce the heat to medium.
  • Cook until both sides of a roti turn golden, flip when necessary.
  • Be careful the first time you flip, as the flatbread may scrunch up. Use a metal spatula to flip the roti properly.
  • Adjust the heat as necessary to prevent burning and make it fluffy.
